A lot of people have been asking me to post the recipe for my vegan banana bread....
I have to admit..When I'm short on time (almost always... aka lazy) and have access to Cherryvales 'Everything But the Bananas' Banana Bread Mix... I will 100% use that! It is so easy, you just mash up the bananas, and any add ins you wish (nuts, berries, etc), put it in the oven... and you're left with the most delicious loaf of banana bread. It is honestly some of the best banana bread (vegan or not) that I have ever have. The mix itself has minimal, high quality ingredients and all you have to do is add mashed banana. It also calls for oil... However I try to avoid oil as much as possible when cooking and baking at home, so instead I add applesauce. Adding applesauce adds the moist (I know terrible word) texture that oil would give the banana bread. if you don't oil, then coconut oil works great too! If you want the whole experience of making baking from scratch though, I totally get it, and that is why I will be posting my perfected banana bread recipe this week! So stay tuned. I don't want to post anything I'm not 100% with, and I have to make sure that it tops the banana bread mix I usually use.
